Solid video; I've learned a bunch from Rinella's videos (and mostly the meateater podcast). You'll get lots of opinions on various styles of field dressing (this is the interweb, after all

) but he certainly did a great job of this style. Particularly, he did a good job of showing how to use the knife in such a way as to not get tons of hair pieces on the meat, which is very important. He also did a great job of showing how to cut around the anus (note he left a little skin around the ring) and how to remove the urethra without spilling urine.
That said, you don't actually need to saw through the pelvis or rib cage, even if you are removing the guts. There's also the other style of field dressing, the gutless method, that a lot of folks do and Newberg has a good video of it here:

If you do the gutless thing but still want the heart and liver, it's quite easy to break a couple ribs at the sternum, and lift up to access the heart.
