A quality bullet in any of the weights mentioned will kill a Elk, as long as the driver iis competent. While I'm not a .257 Weatherby fan, I have watched severel Elk smoked at distance with the chambering. I believe they were shooting some rather light partitions.

I've killed Elk with.

.375 H&H & .375 Ultra - 300gr Hornady Interlocks, 270gr Hornady Interlocks, 260gr Accubonds.
.300 Win Mag -180gr Partitions, 180gr Accubonds, 180gr Ballistic Tips, 215gr Bergers
7mm- 140gr Accubonds, 175gr Partition, 180gr ELD-M
.458 Win 500gr Partition
9.3x62 - 286gr Partition

And assorted other weights and chamberings over the years that have slipped my mind.
