North end butchers?
« on: January 11, 2020, 11:59:28 PM »
Who makes the best pepperoni landjeager and summer sausage around Camano?
TNT custom wild game and Del Fox meats are the closest to me, Silvana isn’t too far away.

Are there any others nearby that I’m not aware of, that make great sausage?

Don’t go to Silvana. They’re a shadow of their former self’s unfortunately.

Curious to hear your experience.  I've processed over 100 animals there and have never had a problem.  PM is fine if you don't want to post but my experience is far different.

At the two memtioned I have close friends,  trusted,  that have been short meat and been told don't worry, we will take a littke little here and there and you will get yours.  One person they gave him zero meat. During the busy season they are known to butcher in bulk and divide and distribute.  You do not bring a deer and get your own meat back. Frany, selfishly, I hate to see TNT mentioned! He does great work and you get your animal processed and nothing mixed in.

I now, poorly but getting better, butcher my own. Big volume like moose or elk i would only trust john.

I've taken three critters there. It has been a few years.  Positive reply say they have changed their ways. I wouldn't take a game animal to either during any general season. I wouldn't trust them to not mix and match animals. The person that i mentioned that got none was told his deer was lost but to not worry, they woukd make sure he got venison.  He of corse said no thank you.  This was 6 or so years ago.

This kind of crap is why i butcher my own.  I just dont trust strangers to butcher my meat.  Not only are they not going to eat it, which would lower the standards, but theyre doing it for profit.  And, they charge by the lb, so the more nasty crap that gets thrown in, the more money they make.

Honestly, i love eating my wild game meat, but i dont enjoy butchering and packing, its a chore.  But i do it anyway, so that i know exactly what im eating.  Id gladly pay somebody to do it if i knew they actually had the same standards as me, and were doing it as if it was going to wind up on their own plate.

I’ve had several beef processed at Del Fox in the past and haven’t had any issues. No meat processor is perfect and there’s always going to be a customer here and there that’s going to have a complaint. You just have to pick one that has the least amount complaints I guess. It’s probably best to find a guy that just does or specializes in wild game.

Del Fox will tell you they group grind.  You get your weight of grind plus the added weight of required fat.  Might be yours, might be the guy who dragged his 2 miles in 70 degrees with the hide on, no thanks.  It’s not a rumor, they told me that.   That’s when I said no thanks any longer.  I would guess that was 4-6 years ago or so.... Now I process and grind my own deer and elk.

Your own pig or beef might be a different story.  But, wild game in the heat of the season that is what you will get.

Id bet thats all butchers.  I like knowing where my meat has been every step of the way.  Not interested in eating mystery meat.  Also not interested in having my game meat mixed in with a percentage of domestic (aka mystery) meat.  If i ever have such a b as d hunting year that i need to buy meat, ill get it from the guy up the road that raises cattle.  Been a lot of years since ive purchased any meat other than fish, but ill be damned if i ever buy meat from some unknown origin.

Ill keep that in mind incase im ever in situation where i have to head out to sea and dont have time to process my own animal, thanks.

If i had to pay to have my game butchered, cost would be an afterthought, quality would be the main issue.  Lets be real, none of us hunt to save money.

I take all my stuff to TNT. Great results every time. I also tend to take my stuff there during the off season. So I'm pretty positive that my meat is my meat.

I took 25 pounds of trimmed and cleaned beaver meat to tnt last year and he made me sausage that was fantastic and he was excited to do it because it was something different. Everyone that tried it thought it was deer. I don't think you will be disappointed taking it there.

Before I started processing all of my own animals, I took a couple of animals to both Silvana and Del Fox. Silvana produces a better product in my opinion. But I have had two incidents there where I was treated so rudely, I swore I would never go back. The couple that bought Del Fox are super nice, as is their staff. But, the last batch of duck pepperoni I had them do had the consistency of bubble gum and a couple of the vac paks were not sealed when I picked up the batch.
I never took stuff to TNT, but friends have and their pepperoni is very good and land Jaeger is killer! Not many wild game butcher do lanjaeger in my experience.
I saw someone mention Andal's. They are close to my house, but my understanding WAS that they don't process game meat. However, a couple years ago I was in a pinch for some pepperoni casings. I called to ask if I could buy some and the butcher said come on down. He didn't charge me for the casings. And, he indicated that they would do some specialty meats, and let me sample some of their pepperoni. Would love to hear if anybody has use them. Anybody?

Sea Bolts in Oak Harbor makes some killer stuff, but you have to have a minimum amount of clean trimmed meat.  Did I mention how good it is?

TNT is awsome and you will get your own meat. The only other guy i know that does that is Linds Meats in Kent. He will wheel that animal out right in front of you so you know its yours. Or atleast thats what Mike did 20 years ago
