Bacon Wrapped Elk Backstrap

A few weeks ago I took a 3 pound backstrap roast and cut it up into little mini-steaks.  Then wrapped them in thick-cut bacon and plopped them on the BBQ.

Good Lord Almighty, this was GOOD!

I just did the same thing with my tender loins this past weekend, oh my god were they Delicious, sory no pic's

I just so happen to have a couple of whitetail backstraps,  and that bacon wrap looks grub. :drool: :brew: :cue:

We just had some back strap a few nights ago. I typically will sautee onions, mushrooms, and some chopped bacon in a pan, remove and cook the back strap in the same pan. Make a side of mashed potatoes and veggies. load the sauted items on top of the potatoes and try not to eat until I am sick  :chuckle:
