My favorite jerky recipe for beef and game.

Figured I'd share my jerky recipe, family has been making this for over 30 years, it's about the only way I do jerky now.

1 1/4 cup soy sauce,1/2 cup salt,1/4 cup pepper,2 small onions, quartered or smaller but not diced,8 stalks celery,4 cloves garlic, minced,4 teas. Hot sauce,2 cups water.
Bring to boil,  reduce heat and simmer 10 minutes.  Drain juice in large container and cool completely. Meat should be sliced 1/8 to 1/4  inch. soak meat over night... stir when you can too make sure meat stays loose and marinates thru out.
Place on dehydrator racks and add black pepper or red pepper flakes if you desire.
Into the dehydrator until white fibers show when trying to brake in 1/2.

I play with it batch to batch, I always stick with tabasco for the hot sauce, but I'll double when using game meat. This is a pretty salty mix, so I'll sometimes use low sodium soy, or cut the salt back some. Taste before adding the raw product, pretty easy to water it down as needed,flavor profile doesnt change terribly.

It's more effort then some of the simpler ways, but its worth it in the end!

Never used a wet brine for jerky. Will give this a go on my next batch. Thanks for the recipe.
