Been cooking some salmon.

King Salmon (marinaded in soy, yuzu (or lime), ginger, honey and sesame oil. Matsutake mushroom and Pickled Green onions and grilled bok chop.

Smoked Salmon Terrine.

Beer Battered Fish

For 1 lb fish

Whisk 1 cup flour, 1/2 cup cornstarch, 1 tsp baking powder, 1/4 tsp baking soda, 2 tsp salt, and 1/4 tsp paprika. Then mix in 3/4 cup cold beer and 1/4 cup vodka. Whisk until thick and lumpy.

Add 1/2 cup flour to a large bowl and toss fish in flour until evenly coated.

Coat fish in the wet batter, allow to drip off, add back to plain flour and add to 350 degree peanut oil. Cook for 3-5 min.

Chips-
Roughly peel 1 russet potatoes per person, leaving some skin.
Cut 4 times length wise.
Cut again into strips.
Add to pot and cover with 2 quarts water, 2 tbs vinegar, 2 tbs salt.
Heat over high. Bring to boil and boil for 8 min. Set aside to let cool.

Fry at 325 for one min. Set aside. (fry fish)
Fry again at 375 until golden about 5 min.

Tartar Sauce

3/4 cup mayo
1 shallot minced
3 tbs capers minced
2 tbs pickles or cornichons
1 tsp sugar
2 tbs minced parsley
Dash of pepper and salt

Mix the day before to let flavors meld overnight.

Not in this recipe, no need to strain out.

More or less you just take raw shrimp, pulse in food processor with cold cream, then added homemade smoked salmon. Moved to a bowl and folded in cooked leeks and chives. Put the mixture in a terrine dish and placed in a water bath (roasting pan with extremely hot water that goes up halfway up the side of the terrine dish). Then bake. Then cool overnight.

Seafood meatloaf. Kind of.
