OK guys.
I have another great one for you.
Since you ate up the first recipe try this one.

PEACH PIE
This recipe yields a little over 3 fifths, you can easily double this recipe if you want a bigger batch..

Ingredients:

½ gallon (64 oz.) Welch’s White Grape Peach Juice
1 ½ cups White Sugar
1 can Sliced Peaches (15-16 oz.)
3 Cinnamon Sticks
½ cup ( 4oz.) Peach Schnapps

Bring this to a boil, then let it simmer covered for about an hour. Let it cool down to room temperature then add the following:

1 cup (8-9 oz.) 190 proof Grain Alcohol, Everclear, Graves, etc.
½ cup (4 oz.) Peach Schnapps

You may have to strain this a couple of times through cheesecloth. Now just pour it into some Mason Jars and let it sit for a couple of weeks in a cool dark place. You can drink it right away but the flavor does mellow and taste better.

This was a hit at Elk camp. My first year big game hunting and being invited to Elk Camp. Even though I didn't get an elk, I got an invite back. I made two different ones, one with fireball, one without. The fireball one was the winner.

My next batch will have fireball for sure.  I added a fireball to a few jars made last week and it was way tastier.

Pretty easy.....recipe

1 gallon apple juice
1 gallon apple cider
1 1/2 cups sugar (some do no sugar some add 3 cups.  I split the difference and it worked really well.)
Cinnamon sticks
2 tbsp. vanilla extract

Bring above ingredients to a boil then turn temp. down and let simmer for 20-30 minutes.  Remove from heat and let stand until it reaches room temperature.  I put mine in the fridge after a few hours of sitting out and add liquor the next morning.

1 750 ml bottle everclear 151 proof
1/2 - 1  750 ml bottle of fireball (depends on how much alcohol you want.)

My last batch had two gallons of base with one 750 ml bottle of everclear 151 proof.  Pretty darn good so I think I will just do a half bottle of fireball as to not make it undrinkable.....just looking for the flavor.

IS the amount of alcohol correct? Only 2 cups total? Seems like not enough to me?

Sure, first recipe I pretty much followed the original recipe. 1 gal of apple juice 1 gal of apple cider. although I added no sugar! It is sweet enough as it is. Then I put about 12 sticks of cinnamon in the pot. In a coffee filter put about 1tablespoon of nutmeg, 1/2 tablespoon of whole cloves, tie the coffee filter with butchers twine or similar (thought about pumpkin spice but didn't add might try in the next batch). 4 tablespoons of vanilla extract (was a little too much)  Ad apple juice and cider and coffee filter and vanilla. Bring to boil, reduce heat and let simmer for about 15 min. Then completely take off heat and let cool. Either put in fridge or just get to room temperature. Add 1 liter of everclear and 1 pint of fireball. Then enjoy.

One thing I did was through out the boiling and cooling process I did was taste it to make sure it was going to be good. And it was. What I would do differently is use 1/2 gal of everclear (either 151 or 190 proof) instead of 1 liter. I would try and keep it at 1 pint of fireball, but I could see using 1/5th.

I agree with that. 2 gallons of cider to a fifth of everclear isnt strong enough to me. I mean its good but its still so sweet, even without adding sugar that its hard to drink much of it so I would rather have a little more bite.

If you ever make it to the my area let me know....I will gladly give you some fireball apple pie.     Provided I still have some, it doesn't last long in these parts.   :chuckle:

Give me notice if you have a trip planned and I will be sure to have some.
