Grinding Elk into Burger Questions

I am going to be grinding some elk into burger.  Should I grind twice or one time. If I grind twice, I will start with a course disc (about 1/4 inch) and then go to a small disc (1/8 inch).  If I grind one time, I will use the 1/8 inch disc.  Any disadvantages or advantages? I recall my dad telling me that the meat can be mushy if you grind twice.
