I got one too.  I was told by a good guy on here (kc kracker)  to rub the inside down with vegetable oil and then heat it up.  Master Built recommended 275 for 3 hours and that last hour throw in a cup of chips.

Yep. Just wash the racks with soap and water. Then warm up and dry out then spray the whole inside down with PAM. Then let run at temp for another 30 minutes or so. Then your ready to cook.

After assembly or after taking it out of the package clean and wipe it down to remove any factory leftovers.  Then if you want to apply some kind of oil, up to you, then fire it up a couple of times without any foods to start the seasoning process.  My preference is to clean the grates only after each use and when I fire it up I oil and seasonn them while they warm over the smoke for awhile before I put any food products on them.  Other than the grates everything else does not get touched to allow a continuos consistant smoke and seasoning flavor.  I don't sling food products or sauces or seasons around so no need to clean the interior walls.  My latest side smoker I wiped it down after assembly and lit for a whole day using different flavors of charcoal from kingsford and then the last half of the day I finished with apple wood.  In the end its up to you and what you want to do.  Best of luck and share your first meats when you're done so we can drool over it.

You will love it...I just smoked a pork loin Tuesday.  It was awesome.  Here is my smoker and results.  KC_kracker gave me good pointers.  I am hooked.

The directions that came with my smoker said to season it by running 1 pan of chips without food on racks.

One pan is just the min, you can do more if you wish. As said earlier spray or wipe down with oil and cook empty about 3 hrs and your golden. It only gets better from there. Enjoy an have fun
