thats common with the home depot tstat. too short. they asell longer ones you just gotta look. you can also get a wireless setup from walmart for $30, and watch the temp from tor comfort of your desk 

My neighbor bought a wireless temp unit for his smoker, and couldn't get it to work.  Maybe because the thermometer was inside an all-metal box?
