I have had coots several times, and have never tasted the same... The first time they tasted great! I couldn't tell the difference between them and some widgon i shot.. The second time i made them for my girlfriend, now wife...
It tasted like tough liver. I have had it a few other times but it never tasted as good as the first time...
I think animals flavor is largely reflected from what they eat... Anything corn fed is.
I have also tasted meganser.
