4 1" thick steaks cut from the backstrap
4 thick slices of bacon
Huckleberry reduction sauce
2 cups fresh huckleberries or 1 pint huckleberry jam
1 cup chicken stock
1 cup red wine
In a small sauce pan place huckleberries if fresh add about 1 cup of water and one tablespoon of sugar. Cook until the berries burst then reduce heat and cook until half of the liquid is reduced. If using jam, add about 1/4 cup water and again cook until reduced by half. Add chicken stock and cook until reduced by half. Add wine and again cook until reduced by half then turn down to a simmer and keep warm.
For the steaks, lightly season with a little salt, pepper and garlic powder, wrap with bacon and secure with a toothpick. Have grill preheated and place steaks on grill, cook about 4-5 minutes per side then with tongs pick up and roll the steaks in order to get a good crisp on the bacon. Steaks should be medium at this point; remove and plate. Drizzle the huckleberry reduction sauce over the steaks then serve and enjoy.
