One of the local commercial fisherman just came in with a bunch of fresh tuna. I bought some whole for $2 lb. I cooked six of the loin steaks up and they were great. I put olive oil, salt, and pepper on them. Cooked them on the hot grill for 2 1/2 on each side and squeezed some lemon on them.
What is your favorite way to cook fresh tuna?

Italian dressing for a marinade is good and deep fried is awesome.

Italian dressing for a marinade is good and deep fried is awesome.

  :yeah: Creamy Italian dressing, it's a Safeway house brand. Slice medalions about 3/4" then grilled on a charcaol grill with some hard wood.
    Slice about 1/4" thick medalions egg wash and dredge in Italian seasoned bread crumbs then pan fry in olive oil.
    Can't go wrong with deep fried albicore fish and chips either

Tuna tacos are pretty damn good too, hopefully you saved your tuna bellies for the smoker.

I canned 47 Half Pints for my self.  Canned 216 Pints for friends this year.

Thanks for some great ideas. No I didn't save the bellies for the smoker. I will try that next time. I saved the carcass for the crab bait.

alot of people say in sesame seed oil, i can tell you its a waste of good tune, its nasty. i cann mine and use it on sandwiches or like you grill it with a little bit of olive oil and only about 2 min per side  :tup:

Here is my Tuna Pasta with Garlic, Lemon and Olives.
3 cups dried conchiglie or gnocchi pasta
4 Tbs. olive oil
4 Tbs. Butter
3-4 garlic cloves sliced thin
7 oz canned tuna *I can my tuna in Pint jars
2 Tbs. fresh lemon juice
10-12 Sicilian or black olives pitted and sliced
2 Tbs. flat-leaf Italian parsley chopped
Fresh Romano Cheese shavings to garnish
Cook the pasta in salted water until AL dente.  Drain and return to the pan.  Heat olives oil and half the butter in a skillet over low-medium heat.  Add garlic and cook until the garlic just begins to turn color.  Reduce heat and add tuna, lemon juice, and olives.  Stir gently until all is heated through.  Add the cooked pasta to the tuna mixture. Add the parsley and remaining butter then toss and top with the Roman Cheese.

Olive oil,garlic,salt,pepper. And then roll in sesseme seeds. Cook on the grill as hot as you can get it. 2 min. Max. Should still be pink inside. Very good!

I guess I like nasty stuff. Albacore tuna is amazing and my favorite way to eat it is pan seared with a recipe using sesame oil.

a little soy sauce
a dash of japanese sweet wine
couple tablespoons of sesame oil (I go heavy on it)
a little rice vinegar

Mix all that up and marinate for as long as you can stand, as little as a few hours and as long as a whole day.

Drizzle some olive oil on, dip in sesame seeds on each side and sear in a hot pan. When I say sear I usually just sear... so maybe 30 seconds to a minute tops but some people like it a little more done than others. I'm sure some will disagree with me but I don't think tuna should ever be cooked all the way through when grilled or seared it really gets dry and fishy if you do. For some reason when its smoked, canned or deep fried it doesn't do that.

I'll mix up a little soy, sesame oil and wasabi to dip it in.

This is my favorite recipe especially for fresh tuna, its great with frozen stuff too though. I saw the real recipe somewhere, but this is just what I do I'm not one to do much measuring  :chuckle:
