German or Polish sausage recipe

We already have a very good garlic kilbosa recipe but we have around 500 lbs of sausage to make and wanted to try something different with around 200 lbs of it.

Does anyone have a mild to medium heat recipe they would be willing to share?  We usually mix 1/3 pork fat or 1/2 pork shoulder with the lean meat.
