2 lbs. Cougar sliced thin
1 lb. fresh mushrooms I like Chanterelle's
1/4 cup Cashews or peanuts
10 whole dry red hot Chinese peppers
3 cloves garlic
sesame oil
Marinade for the cougar
1 Tbs. dark soy sauce
1 1/2 tbs. ginger wine
1 1/2 Tbs. cornstarch
1/2 tsp. sugar
1/4 tsp.baking soda
mix marinade in a bowl large enough to hold the sliced cougar. Add cougar to the marinade and allow to sit for at least 30 minutes or longer. Heat wok to high heat and add 3 table spoons sesame oil and saute peppers, cashews and garlic. stir in the marinated cougar and saute for 3-4 minutes or until cougar starts to brown. Add mushrooms and continue to stir-fry until the mushrooms are heated through. Splash with a little soy sauce and sesame oil and serve.
