Puffin TBS HOUSE

Since I was doing cheese I asked fam an friends. If they wanted me to smoke for them to. Only catch, is they cut and wrap. I wanted to do it all at once. Which that did'nt work. So the last 3 days she's be puffin away. pepper jack, moz, provalon, chedder, and sharp chedder w/ pecan and the amazen pellet smoker 4/5 hrs. Here's about half of what I did. Might be doing one more round today.

how do you get the smoke in there without melting all the cheese?

The amazn smoker he has, smolders creating the smoke. It's such a small unit for a large cooking area that it doesn't heat it up. As long as you keep the temps below 90 you can dump all the smoke you want to without the cheese melting. The amazn smoker is a great tool to have for cold smoking and adding additional smoke to hot smoking.
