Don’t be afraid to crank up the heat. I’ve done butts at 300 degrees when I’m in a hurry. Finished product isn’t much different than 225-250. I never foil and pull at 195 and let rest

Very disappointed in myself for not thinking of this myself at some point in my life up to this point... :P

...on the other hand, Pianoman just gave me a reason to go buy a pork butt for next weekend... :tup:
Think Safeway had them on special for around 1.50 a pound.  Would be a cheap and tasty experiment.
