Ingredients-
4 or 5 elk steak ( I used cube )
1 roll pilsbury crescent rolls ( 8 count)
1/2 sweet onion
Handful mushrooms
1 package brown gravy mix
Flour
Seasoning for steak
Dijon mustard
Olice oil
Butter
White of one egg
# cheese optional
Directions-
Pound out steak to tenderize and season. Let sit awhile to juice up a bit. Dredge lightly on flour and fry quickly in olive oil only enough for the blood to seap out a little. Remove and place on paper towel or plate. Saute onion in frying pan until tender and add mushrooms , let cook only couple more minutes. Open crescents and pinch 2 together to make a rectangle, 1 package will make 4. Spread a little dijon mustard on the dough. Now cut steaks ( which are not quite done ) to fit on 1/2 of the dough leaving a small edge of dough around the whole thing. You will be making a pocket out of it. Place elk on the dough, then add onions and shrooms on top. I then added a little cheese, then another small piece of meat, then fold dough over and pinch all edges together. Whisk together 1 egg and dash of water. Place pockets on greased cooking sheet. Cut 4 small slices on top of dough and brush with egg white. Place in preheated oven to 350 for 15 minutes or until golden brown. While they're cooking make gravy ( homemade with meat drippings would be best but I used packet). Pour gravy over pockets and serve. This was a hit at my house. Might seem like alot of work but its really not. Let me know what you think!
