Cold Smoke Cheese in Big Chief.

Fired up some cold smoke in the Big Chief for some cheese. Turned out pretty good.
Slap some bacon on a biscut and lets go, were burrnin daylight!

Love me some smoked cheese! Another member on here makes it quite often, but had never given me any. Until I brought him a few packages of elk steaks and he relented and gave me a sampling of three different kinds of cheese he had smoked. I loved em all!  :tup:

Nice! pepper jack is one of my favorites to smoke. Havarti is on the things to do list.

Dumb question but are you putting it in the smoker or did you leave on top and let the smoke rise to it?

Yep left the rack the way you see in pic then slid the cardboard down over it. I want to say these directions come in the Luhr Jensen Smoker Cook Book.. Need to do it on a cooler day so you don't melt the cheese.

That's a great Idea with the cheese set up. Friend of mine tried inside the unit a few years ago and of course it all melted  :chuckle:  Never would I have thought smoking it outside the unit  ;)

I ain't no expert at smokin. But with this method it is considered cold smoking because your smoke temp is 90 degs and below. Any smoking technique above 90degs is considered hot smoke. Check out some of the very informative Smoking threads here on HW. Have fun!

Love smoked cheese.  If you don't have a rack for the top...i put my cheese on top two trays and don't put the door all the way on (front door on mine) put the door so it is sitting on the ground with slight angle on the smoker...works great just use two pans and take cheese off... haven't had any melt on me... :drool:
