I tried to smoke a duck once. I went through a whole box of matches and never could get it lit.

I'll stick with Backwoods.

I'm gonna smoke some duck and geese coming up in the next week or two, and I will let you know how it turns out. I think i'm gonna do two batches. One with apple, and the other is unknown.
Shoot a goose, save a plane!

I brine with brown sugar, terriyaki sauce and a little tabasco for 24 hours.  Pull it out and sprinkle either pepper or crushed red pepper on it and put it in the smoker.  Comes out a little sweet with a bite to it.

I use brown sugar, garlic, ginger, salt, pepper, crushed red pepper, and pineapple juice.  let it soak for 24 hours. then smoke with 1 pan of apple chips at 200 for about 4 hours. turns out great. then I slice the breast and vaccuum pack in snack size portions. Great on crackers with cheese or in salads.
