Have never given anything to the butcher that was steak worthy when I process it myself.  I don't have the patience, and my time is worth more than the cost of .79cents a pound wrapped and ready for burger.  I have had specialty cuts as mentioned already made with the smalls for 2.49 or 3.49 depending on the type.

I just paid $127.00 for a hanging weight of 135 lbs and some fat added. Cut ,wrapped ,frozen. Took it in on Friday picked up on Sunday.

A fair rule of thumb would be from 60-90 cents per pound hanging weight for cut and wrap.  Most commercial shops will not skin.  In my neck of th ewoods most guys that do pay end up paying about 75 bucks for a deer.

In the Methow Valley there are two outfits that cut deer.  One charges 225 and the other charges 150.  They both only do steaks, roasts and burger for this price.  Any pepperoni, summer sausage or jerkey costs extra.
  Both will store your carcass in the cooler and you can pick it up when you leave town
Interesting enough is the higher priced place took in over 400 deer this year .

We do our own steaks and what not, but for grinding we take it to the butcher. We turned in 96lbs for the four deer we shot.
20lbs of Pep with added pork fat
20Lbs of Summer Sausage with added pork fat
20lbs of Breakfast Sausage with added pork fat
36lbs for Hamburger with added beef fat

Cost us $136.00

For a few years I was using Silvana Meats.   Did a good job and only charged $0.65/# for cut/grind & wrap quarters.
Didn't matter how many animals, flat rate. 
Then 2 yrs ago the charged $65/animal minimum. That came to $2.45/#   for 2 small blacktail.
Never again, bought a grinder for $100 and already own vacuum sealer.  Works great grinding venison and pork so far.

pay nothing... do it myself... that way package sizes are what I want, not what they think I want..

Which of course in no way answers my question.....
knew that answer wouldn't take long to show up  :chuckle:

around here it's .65 per pound and $65 minimum, as for package size you tell them cut for how many people and they wrap accordingly.

Yeah, I went slow.  First bought a cheap grinder and a scale.  Next year was the vacuum sealer, then the stuffer and so on, then I went all out on the Cabelas 1hp grinder.  Now I have everything including the smoker.  We pick a weekend, cut and grind and stuff and smoke and package...then in 4 or 5 months its all gone and we wish we had more.

Generally costs me around a 6 pack of Rainier and maybe a few oz of whiskey... ;) Last I checked the going rate at some of the butchers in snohomish co. was around 69 cents/lb. This also includes your burger at most places. I think Del's has a minimum of $85. I just processed my deer the other night and man, for that rate its a heck of deal! However it's much more rewarding to cut and process your own meat if u have the time IMHO. So many options and don't have to worry about eating any of the crud you wouldn't want, I guarantee the butchers don't tske much time cutting the junk out.

The fun part!!
