BEEF BREAKFAST SAUSAGE

Anyone ever try something like this?

I have a surplus of ground meat leftover from last years beef, plus what we have from this years 1/2 beef.





Recipe type: gluten free, dairy free, gfcf, beef, breakfast
Serves: 8
Ingredients
2 pounds ground beef
1 tablespoon brown sugar or maple syrup, optional
2 teaspoons dried ground sage
2 teaspoons dried basil
2 teaspoons salt
1 teaspoon onion powder
1 teaspoon ground black pepper
½ teaspoon dried marjoram

⅛ to ¼ to ½ teaspoon red pepper flakes, optional
Buy Ingredients
Instructions
Mix all ingredients together in a bowl until well blended. Divide beef mixture into 16 patties. Cook in a lightly oiled pan until cooked through.
To freeze: After mixing and shaping into patties freeze on a baking sheet lined with plastic wrap until firm. After the patties are frozen, place in a freezer bag separated with waxed paper. Remove as much air as possible, seal, label and freeze.
To serve: Thaw or cook from frozen in a lightly oiled pan until cooked through.

Sounds good to me Bro.  Also check out Spokane spice company.  We just did the Jalapeño, Sully's, hot and sweet italian, and yankee sausages.  All have been excellent so far.  Only advice I can give you from what I have done in the past, and these is do a 1/2 to 1 pound less meat than the seasoning packet is good for.  Also, they taste different from when you grind and stuff/package, and then vacuum seal and freeze if you know what I mean.  We have tried a few from the grinder bowl, and thought, ah, its alright, and then went ahead and packed and froze.  Then thawed out later and cooked, and thought, wow that is really good.

We run through course grinder, then add seasonings and mix, then run back through course grinder again.  Then we either stuff or bulk pack, and then vacuum seal and freeze.

I wish I was there, we could knock out a bunch in a day, I have a bad ass grinder and all the accessories, like scale, stuffer, vacuum sealer, etc...

One reason for this recipe is that the wife is gluten intolerant, a lot of the premix stuff is full of wheat, or iffy on the ingredients.

No problem Brother.  Don't be alarmed at the shipping prices when you make an order.  I was, thats why I called.  My order was like 16$ and my shipping was like $35.  When I called, the lady looked at my order, bundled it up, and shipped it in one box for a few bucks, and then they charged my card after the order was all packaged and shipped.  One company I will do business with for years to come!
