Breast it, cut into medallions about the size of a "Silver Dollar", add a tablespoon of cream cheese to one medallion, and either a spicy bread/butter pickle or a jalapeño slice. Cover with another medallion. Wrap with bacon. Secure it with a tooth pick and cook it on the grill until bacon is done. Dove breast should still be tender. A handy trick is to start with the bacon on the tray then build the wrap so all you have to do is role it up.
