Sweet Chili Sauce

A recipe my wife got from a co-worker. A simple sweet/hot sauce that is not overwhelming, and has great flavor.

2.5 cups Hot water
2.5 cups sugar
1 Tbsp crushed red pepper
1 Tbsp salt
5Tbsp Sriracha hot chili sauce
2.5 cups ketchup
2 Tbsp lime juice

Boil water, sugar, red pepper and salt  for 10 minutes or until sugar is dissolved and remove from heat.

While that boils, in a separate bowl combine Sriracha, ketchup and lime juice. Combine with boiled ingredients and let meld for at least 30 minutes in the fridge.

This was for an Asian cucumber salad which is basically chunked cucumbers, tomatoes, green onions and chopped cilantro all combined with the sauce poured on. Good stuff ! The possibilities are endless.

Yesterday we marinated boneless, skinless chicken breasts in it for 5 hours. Tossed it on the grill until just done. Sooo Good, and tender ! No left overs.

Next I am going to mix this sauce into a venison meat loaf. I may try basting hamburger patties with it. Might even try it as as a baste for beef ribs, now that sounds good.

Have not tried the meat loaf or ribs yet. Did slather it on the hamburger buns, I'll do that again.
We had some breaded pork chops and stuffing last night ( I don't usually do pork, Thanks mom ) We had no apple sauce and I wanted a change from A-1.
Drizzled a bit of this sauce on the chops and stuffing. Definitely will do this again.
