Fresh blackmouth
« on: January 01, 2017, 09:19:29 PM »
My brother and I got out Friday and managed to get a couple keepers. Turned one into dinner New Year's Eve and smoked the other today. Damn, can't beat fresh salmon. Happy new year.

looks good.  I hope to be out as soon as Area 11 opens up to see if I can bring a few in.  This last year was horrific for a salmon season and the freezer is about empty now.

How long did you have them on smoke and what brine did you use?

About 1 1/2 to 2 hrs of smoke and I just made my own brine, sea salt, brown sugar, smoked paprika, Worcestershire and garlic.

Is that a Bradley? What temp were you at?

I did a turkey in my Bradley for Christmas and put a little too much Cayenne in my rub. The skin came out with a feisty bite to it, my wife thought it was too much, I loved it, LOL
