I am a fan of eating bait, and although I preferred kippered and pickled herring, sardines are pretty tasty with some stone ground wheat crackers, a little yellow mustard, and cheese and a pickle on the side. 

I think I will have some for lunch.

I have carried sardines in my pack on a hunt, and then eat them with crackers for my lunch.  I like the ones with mustard.  They taste mighty good at the top of the hill as an alternative to trail mix, jerky, etc.

Most of the time I eat sardines with something besides  just crackers. Some kind of patte with the crackers.
I love pickled herring and will have to try the surstromming. I almost think that these fish are best with something else pickled to balance the flavor. Sweet and sour kind of thing. If I remember right IKEA has some pickled herring with sweet onion that makes a great combo.

Scrounged up a can of sardines thus week as well. Crackers and lunch was served. I really like the mustard ones.

What I don't like is having the oily can in my pack after the fact.

Make sure you take a zip-lock bag to put the can in.

Sardines are good on a cracker and in my youth my dad and I would put horseradish on top. Like it!

There is always a bunch of cans of sardines in my camp.  I love them.  In water though only.  The ones in oil are a bit much for me.  The best sardines, maybe one of the best things I've ever eaten, was at a Spanish Tapas bar in Copenhagen. They were small, whole, slightly battered and fried.  Absolutely delicious.
