Summer Sausage!

Well I decided to try my hand at making summer sausage this year. I needed  to use up some of the ground elk from last year to make room for this years bull. I've made tons of jerky on my GMG but never any sausage of any kind.  I made about 10lb of jalapeno cheddar today and have it all vacuum sealed and put away now. Seems to have turned out pretty good for my first time.  I also bought some seasoning to make pepperoni sticks but that will have to wait for a little while.
