New Smoker Advice

Well my Awesome Family bought me an Green Mountain (Daniel Boone) Smoker. I Killed an antelope in Montana this year. I have never used a Smoker. Thinking of doing an Antelope Roast first. I am going to do research, But some advice is needed. What is the best way to smoke an Antelope Roast. What is your favorite recipe?

Smoking a lean piece of meat is difficult.  I would recommend you dry rub the meat and  cook at 425-450 until you have an internal temp of 125.  Take out and let it sit for ten minutes.....cut and enjoy med rare. 

Maybe an herb balsamic reduction to drizzle over. 

Make sure you put a pot of water in the smoker for a little moisture.  My guess is your cook time will only be 20-25 minutes based on size of roast.
