Smoked up some Steel head and looking for recipes for spreads and dips. Would like to hear what you all do. I have to figure out interesting ways to use this fish, smoked or not. Wife is telling me I have enough fish already ? Is that even possible ? Thanks !

Good old basic smoked salmon spread. Soften cream cheese on at room temp, stir/mix in smoked salmon and some shredded sharp cheddar. (A little bit of milk helps the cream cheese easier to work with) serve on your favorite crackers. It’s also really good to stuff wontons and pan fry for a tasty appetizer

Cream cheese, capers, dill, red onion, and some serrano/ jalapeno if you like a little heat.

I do smoked salmon/stealheed, cream cheese, smoked paprika, minced garlic, and a little cumin.
Ajust as needed for taste.
I always have to make two batches, the one my wife likes, blended smoothe with little smoked paprika.
And the one I like is mix all ingredients up, the. Put chunks of smoked fish in and extra smoked paprika and cumin for more heat.

Smoked Salmon Rillettes:
Melt 1 tbs butter in pan and saute 2 diced shallots for about 6 min on med heat. Let cool.
Take about a pound of smoked salmon, remove all pin bones and add to food processor and pulse for 5 seconds. (or separate by hand) Rustic chunked, not minced to hell.
Fold salmon into 2/3 cup creme fraiche, 3 tbs diced chives, 1/2 teaspoon pepper and juice from one lemon.

Thanks for the reply's. Here's what I found on line and it is great ! So far everyone likes it.
12 oz smoked salmon/steel head, roughly chopped (I boned and hand shredded, and actually went with a bit more than 16 oz)
8 oz pkg cream cheese, warmed in microwave to soften
1 c sour cream
1 c mayonnaise
1 tsp Tabasco sauce
2 cloves garlic, minced fine
1 small bunch green onions
blend together by hand, not a mixer to keep the fish chunkier. refrigerate.
I also took some aside and mixed a touch of cayenne pepper--will do this again, loved it.
