marinate it in garlic, cajun and any other spics that sounds good with some red wine, (cabernet for me), do that for a couple of hours. Pull it out from there and dry it, just dab it dry... rub it with any flavor steak rub you like ( I always add more spicy cajun and garlic to it) and then smoke it for 2-3 hours in apple, hickory or mesquite. Pull out from there and grill it on the BBQ with some onions and enjoy. DO NOT OVER COOK.... medium rare is best. For those of you that love to hunt them but have friends family who don't like the taste this has worked well for me... maybe too well. Also, if you know how to make jerky... duck jerky is right at the top in taste.... caribean jerk/teryaki and jalapeno are my fav's.... these are fro both duck and goose. I am going to try out the sausage recipe on here soon... sounds great.
