Sorry I didn't post up my recipe:
It's a small recipe so you can use it with a smaller harvest (think 3 lbs of cooked, unpeeled crawdads to get enough meat, I've also used HALF that and it's still turned out quite good without altering the rest of the recipe).
1/4 cup butter
half a bunch of green onions
1/2 lb of crawdad meat (claws or tails)
1 minced garlic clove
2 oz. pimentos (half the small jar)
1 teaspoon cajun seasoning
4 oz. cream cheese
stovetop:
melt butter, add green onions and cook on medium until onions are tender.
Stir in crawdads, garlic, pimentos and cajun seasoning. Cook 10 minutes stirring occasionally.
reduce heat to low
Stir in cream cheese until the contents of your pot are smooth and bubbly.
