This stuff is really amazing.  For those who don’t can meat, you should really give it a try.  My only regret is not buying a bigger canner.  This is a 30 quart and I should have gone with the 40 quart.

I did it for the first time this year too! Awesome way to cook and store. What you mixing with yours? I did prime rib seasoning with mine. Made a bunch of half pint jars, easy for packing to camp or as a single serve snack.

1/2 teaspoon of salt and 1/2 teaspoon of garlic powder.  Two of these quarts have 1.5 teaspoons of Montreal seasoning as a trial.  So far I like the salt and garlic the best. We always agh extra flavor depending on what we are cooking it with.  Shredded beef (deer) tacos, gravy pees carrots over rice or noodles, teriyaki etc..

Ive only ever canned venison, but ill be doing some bear soon.  Should be damn good i would think.

I do the hot pack method, season the meat before Browning and cover the meat with au jus. It takes a bit more time but that is what I prefer. This year I added three of four peeled pearl onions and a slice of jalapeno to each jar. I use wide mouth pints and it always turns out really good. Canning is my favorite way to use deer and elk shanks.

it should keep a few years if sealed properly, not that its gonna last that long anyhow

Can it last longer? I just found some goose that I canned...5 years ago? Gonna pop it open and give it a shot, but wonder if it is a lost cause.

I did this with venison, and while technically its still safe, the flavor and texture is shot.    So don't let them go past 12 months for best taste.

Why? It'll keep as long as the seal stays good.... I've had canned pears from 25 years ago that the seals were still good and they were just stored in my garage. The pears were bleh, but the chickens still liked them.

I've done deer, elk, and bear. I put a thick slice of onion in the jar then 1 1/4 pounds of meat (the amount that makes a good serving size for my family) cut no longer than an inch on the grain. This is my wife's absolute favorite way to eat red meat.

I did lose a seal on a stored jar for the first time this fall, the meat turned grayish brown but still had no bad odor when I tossed it out.

What’s everyone do for canning bear meat? I thought about giving it a try. I’ve heard horror stories about bear fat going rancid quickly in freezer. Does canning it negate that problem?
