I just got some fish this last weekend and was wondering if anyone had some good recipes. it was my first bottomfishin trip and need some help in the cooking department.

for halibut,brush some mayo on it and grill with salt and pepper..

we had ling cod on the Q last night. skin side down with butter chunks melting while cooking, a little lemon pepper, some lemon slices and thats it. works for halibut too. it's great tasting fish...don't ruin it by overseasoning it(my opinion)

Just a suggestion but if you ever get the chance grab a copy of Bottoms up Cookery. It is a great book of recipe's found at a dive shop near you.
cook your fish with lemon and light garlic and butter at 350 for about 20 min, drain
put a coating consisting of 1 cup sour cream
4 tablespoons Louisiana Hot sauce
!/2 cup parmesan cheese
then cook for another 25 min at 350 -----longer for larger hunks of meat

mmmmmmmmmm......it all sounds good. can't wait to cook up some halibut tomorrow. guess i got lucky cuz i was the only one on the boat to catch a halibut....made it well worth it.

halibut fillet about 1" thick, onions, peppers & mushrooms on both sides held in place by wrapping bacon aound the outside. hold bacon in place with tooth picks, a grilling basket helps, cook on the grill until bacon is done and enjoy!

1" or better Halibut steaks, keep it simple. I make a simple little brushing sauce of butter, S&P, a little fresh parsely, a splash of dry white wine, and as much pulverized garlic as you desire (87 million bulbs for me). Just melt this together and saute on low, low heat for 5 minutes or so. Let cool and brush liberally on both sides of steak and then place them on a very clean, hot grill. Cook 3 minutes or so and flip and cook 3-4 more minutes until meat is medium rare. I like it just warm in the middle. This is fabulous.
Sea Bass or Rock fish filets: Dredge in well seasoned flour (whatever you like), dip in egg-milk mixture, and coat with Panko. Fry on both sides until nicely browned. YUM

season your rockfish fillet with seasoning salt and wrap them in bacon hold the bacon on with tooth pick pre heat your smoker 250 get the smoke rolling place into smoker for 30-45 min when bacon is done the fish will be done i like using hickory

if ya have the halibut cheeks or even some steaks boil some water add about a cup and a half of sugar with about quarter cup of salt let it boil for a minute then drop the cheeks/steaks in the water, cook them till they float eat um with melted butter. its called poor mans lobster and it will be the best you've had
