Smoked elk jalapeño popper meat loaf

Made this over the weekend. Turned out better than I thought. Definitely a keeper

Started with jalepenos and 2 bricks of cream cheese with rub on the cheese into smoker for 2 hours to soften the jalepenos as they won’t cook in the middle if left raw. Then added a half cup of shredded cheese to cream cheese and filled jalepenos. Set aside

2 lbs of burger, 2 eggs, 1/2cup of bread crumbs , 1/2 cup or so of chopped onion and couple spoonfuls of fresh chopped garlic. Mix well.

Get a sheet of foil and i sprayed it  with oil to keep meat from sticking to it. Spread burger on it in a square shape . Then sprinkle your favorite rub on it and more shredded cheese. Lay filled jalepeno across it. Then roll the meat using the foil under it. I rolled meat out onto a foil covered tray with a whole package of bacon laying on baking sheet. Then wrap bacon over the loaf , baste loaf in bbq sauce and rub. Went in smoker for 2.5 hours until center was 155 deg.
