I've eaten several bobcats. All were from old, large males, and all were good. I'm sure that individual bobcats taste better or worse than others, like meat from most kinds of wild animals. Bobcats taste kind of like lynx, only lynx were better to my taste.

Similar to cougar; with meat that turns white when cooked, like pork. We've done medallions of bobcat tenderloin with eggs for breakfast and bobcat "steaks" in a gravy. All of the pieces are small, and are easy to overcook and dry out. I try to cook them barely done.
