Hasenpfeffer!
Season your rabbit 1/4 a put a light coat of flower on them.
Brown in a pan with little EVOL until brown (make sure the oil is hot and only brown may golden brown not more than that) take out and put on a papper towel to rest. If you have a demi glaze, use demi glaze and store bought five spice, stir some five spice into demi glaze and bring to simmer, put the browed rabbit 1/4 into a two inch oven pen and cover with demi glaze season with five spice. But in oven for about 2 hours make sure its cover with aluminum foil. After two hours poke the meat with fork if meat comes of the bone its done. Serve to your liking maybe with speatzle (German Egg Noodles) or Fettuccine?

If you don;t have demi glaze use beef stock thicken with butter and flower, add five spice and bring to simmer. Heat butter and flower separate and than add to beef stock, make sure you don't burn the butter.

cut rabbit in to quarters put in a freezer bag with lemon juice, salt, pepper, olive oil seal it up put in frig for a couple of hours then bbq.baste with left over juice.

take your rabbit quarter's and soak them in buttermilk over night then coat with flour and seasond salt and deep fry . really simple but tasty.

Cut 2 cottontails into 5 sections soak in brine for a day rinse thoroughly(soak in water another day if you can)prepare coals in two piles one on each side of grill.Put cottontails in a oblong baking pan and cover with your favorite bbq sauce.Add just enough water to cover all rabbit.When coals are hot blanket them with foil and add a few hickory chips.Place rabbits(pan and all) in the center.Close lid and open vents.Go fish or something just leave for 3 hours.Remove from grill and cover with foil and rest for 10 min.Serve with traditional bbq sides.Also works well in a dutch oven on a campfire.

whole skinned and gutted in a big ziplock baggy with a beer and some steak seasoning. sit inthe fridge over night then wrap in aluminum foil and throw it on the grill. the juiciness just bursts in your mouth.

1/4 it and then place in a crockpot with some red wine and mushrooms and onions and let slow cook all day. Serve with mashed taters and some veg and good as hell.
