smoked oysters

living here on willapa bay with great tasting oysters, I was wondering if sombody has a reciepe for smoking these little critters.

I give them a quick brine in salt water for maybe a half hour and then put them on my smoker racks.  I put down a piece of parchment paper first with a fine coating of spray oil.  Smoke at 165 or so and turn them over after an hour and a half.  They are very tasty.  I'll be smoking up a batch 2 Saturdays from now.

Thanks NRA4LIFE, When I catch a couple of salmon on the willapa and smoke them I'll give this a try.

Sounds delicious. I've been on a big oyster kick lately and love shooting them raw with a splash of this:

    * 3/4 cup red wine vinegar
    * 6 tablespoons finely chopped shallots
    * 2 teaspoons finley grated lemon zest
    * 2 teaspoons freshly ground white pepper
    * 3/4 teaspoon salt
just whisk together with a fork

you guys are making me hungry!  I LOVE smoked oysters but have never done them myself.  Might have to now.  Shooters are great if htey are the little pacific oysters.  Can't imagine chugging down one of those big rig oysters!

I dont do the foot long hood canal nasty things.. the rest are good though especially breaded and fried just like there rocky mt cousins :chuckle:

I love the Willapa Bays.  I have a buddy in Raymond and I never go there without stopping at that little white fish place on the bay to buy oysters.  Yummy  That's where I got the last batch I smoked.

My buddy brought me up 8 lbs of Willapas on Saturday.  I took a third of them and mixed in some Emeril seasoning and cayenne pepper and another third of them and mixed in some garlic powder.  The rest I left plain.  Smoked them for about 3 or 4 hours.  They are really tasty.
