different ways of cooking goose meat
« on: October 20, 2010, 08:06:30 PM »
Anyone have any good recipes for goose meat. I've tried it fried, and didn't care for it too much. had some jerky made out of it and it was delicious, but just looking for some other ways to cook it...

Soak your goose meat overnight on beef broth,  season as desired and then either bake or BBQ it in your intended fashion on foil.  Baste occasionally until the goose is finished cooking.  Internal temp of the meat needs to be at least 165 deg.  If done this way you'll have a hard time telling that the goose is anything different than a good cut of roast beef.  I took a batch into work this year and it didn't last long.  It surprised a lot of folks.  Take a little care with goose or duck and it can be turned into a tasty meal.

Of course as previously stated you can always make jerky of some form of sausage with it.

I just grill it on the barbie, a little seasoning, olive oil, then grill it rare, no more than med rare.  Better than beef tenderloin.

soak in salt water over night, rinse & pat dry, cut breasts into 1/2" strips & thread onto shishkabob sticks, season as you would steak- wife likes with just seasoning salt- me & the boys with more spice, put it under the broiler, turn once. only takes a few minuites to med rare-dont over cook-. most people wont know its goose & love it. refrigerate left overs in plastic bag & eat cold as a snack the next day.

Soak goose meat for 6-8 hrs in 2 cups of soy sauce
Next dispose goose meat and drink soy sauce immediately  :)
