Water Fowl Polish Sausage

I have been grinding, mixing,(approx. 10 lbs mallard and 2 lbs pork) and now I'm waiting for the casing to soften up. I bought a Polish sausage mix. I'll let you know how it turns out.

OK I have been waiting and waiting and waiting and now I cannot wait any more, is that stuff done yet ??   :P    I'm not getting any younger here !!   :drool:

Sorry for not posting. I like it not sure if my hunting buddy liked it or not. It was very dry do to the fact I did not put much pork in the mixture and that was intentional. What I did find though is if I let it cook and simmer for many hours it is very tasty. We or I should say I've had it in chili, a stew and a sort of gumbo. Each and every time it absorbs the taste of the sauce if cooked very slowly.

I'm going to make goose sausage next...

Yeah there has got to be something tasty you can do with those damn ducks, a friend makes pepperoni with his and it is not too bad but you can still tell it is duck !!

I really like to fillet the breast and roast them like you would any other type of red meat. Served with potatoes, salad etc.

 Robo, you are hanging out with the wrong guys! Here is duck meat, marinated overnight, shishkabobbed and grilled right in the duck blind. Delicious. No yucky duck here...  :chuckle:  :EAT:

Sounds like it was a good effort. First time I made deer sausage, I didn't use enough pork and they turned out a little dry, I boiled them in beer and that seemed to help rehydrate them.
