i was wondering i cant find a decent recipes for bear summer sausage and i know allot of u are good cooks on here and maybe u guys could give me a few pointers on what seasonings to use?
i've always wanted to dress in a bigfoot costume and run by ppls trail cams so when they look at them their like wtf

bear makes good summer sausage but its a pain to make so I have mine done by a butcher ....Sure someone here makes it ...Congrads. on the bear  :tup:

the best and easiest way is to go to wholesale sports or Cabelas and get a kit from hi mtn seasonings they have kits for 30 pounds of meat and instructions it is easy to make mix with 40 % pork butt shoulder roast mix in seasoning and cure and smoke if you need help with this I will be glad to help you get started let me know

I just did some with the hi country kit this weekend.  It turned out nice.  I do have to say it was a fairly long process but rewarding.
