we hang ours skinned in the shade in game bags. have had them up there for 7 days and never lost any meat and they always taste great. keep it cool enough and you will be fine.

I always hang mine with the skin on for 5-7 days.  It all depends on the weather.  If it's no more than mid 50's during the day and nipple cold at night they'll be fine.  Always hang them in the shade though.  After that time I skin them, debone them and put them in large trash bags in the fridge for another 5 days to let them bleed out.  Then cut and wrap them.  No game taste at all

In the mountains, this time of year, get the skin off, bag it up and let it hang in shade. They'll hang a long time without going bad if it's cool out. I prefer hanging in a cooler for a week.

Take it to a meat locker. Sleep in, wait for your buddies to come check up on you, leave with them, brag about your deer, eat lunch, brag and tell them they are losers, drive around some more, go back to camp, brad some more, eat and drink until you go to bed. Next day, repeat.
I couldn't care less about what anybody says..............

7 deer in 3 years and have not lost any meat.  In fact this year, which has become a tradition, I'm making sauteed venison steaks with onion in a redwine cream sauce with stuffing.  If my wife will eat the venison then I KNOW you guys would agree.  She won't go deer hunting with me since there is no "wine bar".  I know guys, I didn't believe it till I tried it and it worked for me.  I don't make any hamburger only steaks and roast.  1 thing I do is take about 25 - 30 lbs a year to the "SMOKE HOUSE" in Black Diamond and he makes me Jerky and Pepperoni.  Best I've had!

I hang mine skin off for as long as weather allows. Always have and always will. It works for me and no wild taste at all. Good clean kill helps too.

are u kidding?? and who told you this? The best eating steaks in the world are aged for weeks! this goes for ANY biggame!! its all about the breakdown of the meat..thats how it gets super tender. Now if your just burgering and making jerky just take care of it.
