If I take a bear this year, this time I'd like to have some hams smoked. Anyone have any experience with this, either working with a butcher, or smoking it yourself? Recommendations? I'm also looking for a new butcher, one who deals with wild game in the Enumclaw/Puyallup/Tacoma area.
I don't want to be trying to find one while driving around with a dead bear in the back of my truck...
