Best Marinade Recipes?

I was just wondering if anyone had some good Marinade Recipes?  I recently went to Wyoming to hunt pronghorn and I always heard that the meat wasn't worth eating but I am not gonna kill something then not eat it so after some research I found an awsome marinade recipe- (Works well with elk too)

Bourbon Steak

1 cup of Soy sauce
1 cup of Lemon Juice
1 cup of Jack Daniels
1 cup of brown sugar
1 TBSP of liquid smoke
1/2 an onion chopped
3-4 cloves of garlic chopped
1 package of Antelope/elk
Put all that in a bowl, stir it up, with your meat stick it in the fridge for 8 hours then cook.

We talking smoking meat or just meat to eat ? if it is meat to eat I keep it simple ...


  1 gal ziplock bag
  1/2 cup olive oil
  1/4 cup A-1 steak sauce
  1/2 cup chpped onion
  1/2 teas of minced garlic
  6 teaspoons of honey
  1 table spoon of lemon juice or chopped lemon
  1/2 tsp salt
  1/2 tsp pepper
  1/2 tsp parsely flakes

Dump all ingredients into bag ...zip shut ....toss around a minute or two ...open and place meat into bag ...flank steaks or regular steaks ....toss around again ...slightly open the bag on one corner and squeeze all the air out...re-zip ..place in frig for about 5 hours but every once in awhile I will toss around the bag to re position the meat so it soaks in good !! DO NOT RINSE ...... :tup:

If its tough meat I always use a good amount of vinegar in my marinades it tenderizes the meat nicely.

I like Soy sauce, brown sugar, and lots of garlic for a simple marinade.

1/2 lb brown sugar
2 c. soy sauce
1 head of garlic chopped fine
1/3 c. chopped ginger root (1 avg size root)
1/4 cup maple syrup

marinade for 1 day min

i boil the rest of the sauce when i take the meat out and use it as a sauce sometimes
