I buy the Chinese hot mustard powder, make a paste with some sherry vinegar and water, and add honey to it for dipping. Low carb now, so it's been a while.

Here is one I have in the "archive" it is called  Mo's Mustard

4 oz. one can (colemans or equivalent) dry mustard
1 cup vinegar (white or apple cider)
Mix and let set overnight

Next day add 2 eggs, 1/2 cup sugar, 1/4 tsp salt.

Cook until it burps

Cool and mix in 1-1.5 cups mayonnaise

I usually put it in a mustard squirt bottle........ Good stuff

I suppose you could sweeten it up a bit more with honey or more sugar??

That sounds like my recipe except for the mayo. Also I only let it set about 8 hrs if I remember right. It doesn't always come out exactly the same so if it's not hot enough I have added some horse radish and been real happy with it.
