Hi mountain hot dog kit

I have not done the hot dogs, but I have made several of the other Hi Mountain kits with great success.  One thing I learned with them is to use a little less meat than what is called for and adjust cure as necessary if you are using it.  I like my meat well seasoned when making sausages and they obviously cater to a wide audience, so the seasoning is weak in my opinion.  I have found Spokane Spice to be a much superior product and exclusively use them now...

I have used spokane spice but I also use the sausage maker, their hotdog seasoning is really good, you can get a 2 lb tub for 12 bucks and it will last you a while.
