making Sausage for the last two weekends

Hello everyone
the last couple of weekends I have been busy making Sausage I also did some smoked albacore tuna bellies and some Landjager and some snack stix

the Snack stix are pre mixed seasoning from PS seasoning one is 10 pounds of Tex Mex Snack stix and one is 5 pounds of Willies snack stix mixed 60/40 Elk and Pork butt smoked with Hickory

I also did some Landjager ten pounds they turned out Awesome did not last long around here used premixed seasoning from PS seasoning 60/40 Elk and pork butt

My Buddy Lyle gave me two Albacore tuna and I canned them and smoked the bellys they are Awesome I used a basic salt brine for 30 min and smoked at 150 until done they really turned out good

Today I am doing 5 pounds of Elk Jerky whole muscle meat jerky using the sausage makers Colorado jerky seasoning and smoking with hickory will post pics when done also have some ground meat jerky in the smoker using hi country seasoning sweet and spicy have four pounds of that in the smoker using hickory

Question dogtuk. If a guy wants to start smoking big amounts of meats, what do you start with ? I have a Weber and a Bradley and smoke some pretty good meats. I'd like to do a larger scale and possibly sell it. We have a butcher in town but, sends all his meat out for smoking. Ideas ?

as far as commercial sales you will need to get all stainless steel equipment and you will also have to meet all dept of health standards and codes as far as internet sales I know nothing about

I know about the stainless etc and all the gubmint involvement, I was just curious about the type of equipment, brands etc to get going if I wanted to startup smoking.
I couldn't care less about what anybody says..............

Hope this helps oh and craigslist is a good place to find the stuff if you know what your looking for

you know you will need the basics smoker stuffer mixer and grinder vacume package machine scales and storage bins freezer cooler knives shakers for spices and a billion other things I cannot think of right now :-)
