Wild game butcher shop near Marysville?
« on: September 16, 2012, 09:36:15 AM »
Just got half the meat from my buddies elk.  Where do I process it at?  I don't have the fridge space at home, so I can't process it here.  I quick search on here and google and I got two places Kelso's in Snohomish, and Silvanna meats in Arlington.  Any else within a reasonable distance?  Which is the best place to take my elk meat?  (No I don't need to borrow some fridge space...LOL)

I think Silvana is the closest to Marysville, that does game processing.  I think there is also a place in Snohomish that does game processing, but I can't remember the name atm.

You won't be disappointed with Marzolf but last I checked, they were more expensive than Silvana...and they have no problem with boned out meat.

Del Fox mixes all the venison they get in together and then divides it up.  :bdid: I know how I take care of the meat I get....and I know how others take care of theirs. I do not care to have mine mixed with others. Just my opinion

Never had a problem with Silvana or Del Fox. The bear jerky comment is disturbing! Recently had my bear done at Double D in Mountlake Terrace and will be planning on taking them a freshly arrowed deer on Monday.

If you just take in trim meat for grinding most places will not require a tag.  If you take in pieces that are still considered a game carcass almost any of these shops will require a tag as required by state law.

I took my deer to D&D meets in mount lake terrace last year, sure it was inexpensive, but I had bone chips in every package of sausage an burger(no kidding), the breakfast sausage had much larger pieces of lard in it than usual, and the summer sausage was unspeakably bad, I mean it had grape size and larger chunks of what I could only guess was candle wax??? the fat was hard not soft, I couldn't eat it, that was a bummer.  I was beyond disappointed, ohh, and I offered my tag but he didn't even want to see it. I was very surprised at the results, they have a strong reputation in the area for all there domesticated products. I think the 20 something manager in the back with the 14-18 crew did not take pride in or have the experience required for wild game processing. It's to bad because they are very close to me. Unless they have made serious changes to their operation, RUN FROM D&D w/ your wild game!

Just last year huh.....quite the opposite for me. My breakfast sausage turned out great....steaks cut nicely, and ground bulk sausage all very clean. I had pep sticks made also and it was done nicely.

del fox changed owners a few years back, I had always heard good things about them before that.
my friends dad took a deer into silvana and got allot less meat back from the deer he dropped off.

If I can I just do it all myself now

I like kelsos in snohomish.   Del fox has lost all my business after what happened to a friend last year.  He brought in a bear had a ton of jerky made when we went to pick it up all the jerky was lost :yike:.  When we asked about it lady told us they just planned to makw it again from the next bear that came in :yike:.  Losing meat then steal from the next guy bad business.

Del Fox is always my choice. Sylvina meats makes you debone all your wild game before they will process it. Chewing on the bones are part of the pleasure of being a carnivore. There's a HOT little girl that's been working at Dell for 5 or 6 years that .......Well, she's far to young and I'm married...... But I can still look.

John does the best work out there. He makes THE BEST pepperoni you will ever have. He does an excellent job and you get your own meat back. I have used Del Fox and Silvana Meats and were disappointing in both. My brother worked at Del Fox for a few weeks and he was disgusted at how they cut up all the dear and then divide them up to each customer. I doesn't matter to them if you get your own meat back. I don't have firsthand evidence but I believe Silvana does the same thing.
For the last 3 or 4 years, I have been cutting my own meat because I enjoy doing it. I them take my scraps to John at T&T during the off season to get my pepperoni made. I would drive from Spokane to do it too.

A side note, I grew up 2 miles from Del Fox. My grandpa had a cow butchered by them about 20 years ago and they lost it. It was shady when Del ran it and it is even more shady since Pat Cairus took it over.
I hunt therefore I am.

What do you need to get started?

Sharp knives and something to use as a cutting board.  Best steaks are in the backstrap and on the hams.  Hams also have roasts.  Tenderloins, keep them as whole as possiible.  Rib and neck meat is mostly grind for me.  Small pieces that are left over are for the grind.  Remove as much silver skin as possible.  Always cut across the grain of the meat for steaks.  It's easier than you think.
