Just finished batch made with 2 gallon apple juice, liter favorite grain beverage  ;), and a fifth of fireball. Wow nice bite, like it. Now to see what time mellow will do for it.

OK, so I am making up a new batch this year and have made a couple of small changes (added a pinch of nutmeg and boiled with cloves).  Other than that, it is still 1 gallon of apple juice and 1 gallon of cider, and only 1 cup of brown sugar.

I have 3 - 750 ml bottles of Everclear @ 190 proof standing by until it cools.  My question is:

How do you figure out the proof?    :dunno:  Do I want to use all 3 bottles of Everclear or just 2?  I don't want it knock me out, but I want a pretty good "effect"  :chuckle:

I came up with 44 proof (~22%).
3 bottles at 750 ml is 2.25 L and 95% of that is 2.14 L of alcohol.  Then you're adding 2 gallons (2x3.79) or 7.58 L.  So all total is 9.83 L of which 2.14 L is alcohol, so 2.14/9.83 or 21.77% (~22%) or 44 proof.

Thanks!  That's close to what I figured but it just seems weak.   Last year I made this with only 1 bottle of ever clear and some fire ball and it tasted pretty strong :dunno:

Probably pretty close. When I did my calculations on my batch last year, I based it on final volume vs. added liquid. I then calculated the abv for the alcohol I added. I avoided basing it on the amount of other liquid added simply because I had some boil away before adding the alcohol.

Made my first batch. I have a question for you guys though. I made the recipe using a gallon of organic apple cider, apple juice, brown/white sugar and a liter of 190 proof. I put the left over cinnamon sticks from when i simmered it in the jars.

I plan on letting it mellow for 3 weeks. Is it ok to put it in the fridge? If i leave it in a cabinet or something for 3 weeks will it go bad?

Fridge for sure!!! It will go bad sitting out. I was just thinking about this thread today and got the stuff yesterday to make some. I only drink a couple times a year and those first few cold nights of fall are one of them.

Changing the proof is just a matter of diluting alcohol. If you use everclear or straight vodka from the store. adding juice is the same as adding water in your caculations. this site has a good calculator
