I have seen a buck shot like this, it has to do with a hormonal imbalance. It should be fine to eat!

Abuddy of mine shot a spike buck in the coweeman that was the same way. Shot in November, velvet on antlers, 12 inch spikes with bases you cant put your finger between, and no nuts. Wierd for sure!
Remember that buck is climbing that Mt. every day!
