As far as cooking coon, I have usually quartered it and then in crock pot with veggies or whatever. The last three, smaller ones, I crockpotted and then deboned and shredded it later making sloppy joes with it. I was going to do the joes for the catfish trip but was not able to make it. Years ago, I had a non-hunting family over for dinner. I let the dad know I was making coon stew but he decided not to tell his family. They tried it, and after being told what it was, all asked for seconds.
One trick to reducing any strongness to the taste is to remove absolutely as much fat as possible.
